Situated on the beautiful Isle of Skye we believe we are enormously spoilt by the rich, natural larder the west coast of Scotland has to offer. We fully take advantage of this all year round, working within the natural environment and to the seasons as they develop. We strive to work within the community here on the Island and are fortunate enough to have a small, yet, ever-expanding a network of farmers, butchers, growers, fishermen, divers and foragers. However, let’s not forget our own chain of supply within the hotel grounds. Our convenient lovingly kept the garden and polly tunnels provide gloriously fresh fruit and vegetables, herbs and edible flowers quite literally on our doorstep. From the crisp, fresh autumnal cox apples (Our dog Hamish’s personal favourite) to our herbaceous wild mint leaves. Perfect for a warming fresh mint tea or perhaps, even better as part of chilled Mojito in our Chart Room bar.
As much as we would love to be completely self-sufficient, we do have to source whole foods and ingredients from other parts of the Island, be it the land sea and air.
Loch Eishort Mussels
Peter MacAskill, a native of the island, has been rope growing mussels for a number of years. His mussels are widely regarded as the very best on the Island and are packed up and shipped right to the UK

Glendale Croft Produce
A small market garden set up back and run by Bridget Hagmann supplying delicious, locally grown produce to residents and visitors alike. Produce is picked to order to enable you to experience the absolute peak of freshness and flavour. Only small quantities are grown, using traditional, natural methods, with varieties selected for flavour.
Their very own 'Andy the Veg' has now won the most points in horticulture at Dunvegan Show for four years in a row.
They also have a flock of over fifty hens, The Happiest Hens in the Highlands, who lay the most delicious eggs with fabulously rich, deep orange yolks.
Andy Race Fish Suppliers
Based in the port of Mallaig, a 20-minute ferry crossing between Armadale, on Skye and the mainland Highlands of Scotland. Andy Race Fish merchants are renowned for producing the very best Scottish peat and organically smoked salmon, Mallaig kippers and a variety of high quality smoked fish and shellfish - all traditionally smoked with no resort to dyes.
Bought directly from local fishing boats, the fish is freshly landed and caught from the unpolluted nearby Atlantic waters.
We are fortunate enough to have a varied assortment to choose from. Be it monkfish, trout and halibut to langoustines, scallops and lobster.
With this in mind, our head chef, Brian Ross, utilises this produce to its fullest, maintaining the key natural ingredients and applying his own contemporary twist. With such quality within arm’s reach, we believe it is all about letting this fresh locally sourced produce shine through.
